Seriously, I really love food; especially food that’s well prepared and flavorful….nom nom 🙂
I get food orgasm, I swear if I eat something good; like the one time I had fried Yardbird at Red Rooster Harlem…the absolute best…but that’s another story, and I’m no story teller…lol
So my love for food goes hand in hand with my love for cheese, and I try to find ways to add cheese to absolutely everything.
I really enjoy cooking and in the last few months I started doing it more often because not only do you get to enjoy a great meal when you’re done but it’s fun (more fun if you’re doing it with company 😉 ), therapeutic and it makes me happy to see other’s enjoy what I prepare.
Today I had a craving for potatoes and decided to stuff them, it was fun to make and ohhh soo delicious; I’ll share the recipe with you and hope you have fun preparing and eating it!
Stuffed Potatoes
Ingredients: Potatoes, bacon,Sweet peppers, tomatoes, onions and cheese ( I used pepper cheese)
- Boil the potatoes whole with skin still on them.
- Prepare bacon as you would normally then dice into tiny pieces
- Dice your sweet peppers, onions and tomatoes small enough for topping the potatoes and stir fry them lightly.
- Make a hole in center of the potatoes and stuff it with the bacon bits and the stir fried veggies, top with cheese and broil for about 5 minutes
- Enjoy!
- I wrapped my potatoes in foil before stuffing because I boiled them too long; the foil kept them together.
